what is GOLDEN MILK?
Golden milk, also referred to as haldi doodh in Hindi or turmeric milk, is a beverage with a rich history. This drink has been significant in Indian culture for many centuries! The bright golden color of the drink results from blending yellow turmeric (a flowering plant in the ginger family) with white milk. I decided to put a summer twist on the classic recipe by incorporating pineapple.

How to Make Pineapple Iced Golden Milk
Ingredients:
1 tbsp fresh turmeric (peeled and grated) or sub for 1 tsp ground turmeric
1 pinch ground black pepper
2/3 cup coconut milk (I use the carton version, not canned)
1 cup pineapple juice (100% juice)
Directions:
Peel and grate fresh turmeric root (about 1 tbsp) and set aside.
Heat 2/3 cups coconut milk in the microwave (1-2 minutes) or over the stovetop until hot but not boiling. Transfer ground turmeric and a pinch of black pepper to a tea infuser and steep in hot coconut milk for 15 minutes or until cool. If you don’t have a tea infuser you can strain the turmeric out after it steeps with a fine mesh strainer.
Remove tea infuser and pour cooled turmeric milk over ice. Top off with 1 cup of pineapple juice, stir and enjoy!
Notes:
Fat increases the bioavailability of curcumin so using milk with fat helps your body absorb the nutrient.
Piperine found in ground pepper also increases the bioavailability of curcumin (by 2000%).
Turmeric is highly pigmented and can stain your hands or work surfaces, so you might want to wear gloves when grating and peeling it.
